Bell Peppers

Green sweet peppers are unripe peppers. They have a slightly more bitter taste than red, orange, and yellow versions. They contain a variety of nutrients and are particularly rich in vitamin C. Plus, they're a concentrated source of powerful plant compounds like carotenoids and phenolic acids.

Whether you love them in salads, stir-fries, or stuffed with delicious fillings, green peppers are a staple in many kitchens around the world.

Red bell peppers have more than twice the vitamin C of a green pepper. Bell peppers are a good source of Vitamin A. The scientific name for bell peppers is Capsicum annum. Peppers were named by Spanish explorers searching for peppercorn plants to produce black pepper.

Fun Fact - Red bell peppers are simply green bell peppers that have been left on the vine to continue to ripen.

Red, orange, and yellow peppers are actually very ripe green peppers. Bell peppers sweeten as they ripen, so red bell peppers are sweeter than green. Yellow peppers fall in the middle.
