Onions
Brown onions are full-flavored and are used for cooking almost anything. Brown onions when cooked give French onion soup its tangy sweet flavour. The brown onion or yellow onion is a variety of dry onion with a strong flavour.
They have a greenish-white, light yellow, or white inside; its layers of papery skin have a yellow-brown or pale golden colour.
Red onions tend to be medium to large in size and have a sweeter flavour than white or yellow onions due to low levels of pyruvic acid and sulphur compounds. They are often consumed raw (and can be added to salads for colour and bite), grilled, or lightly cooked with other foods.
White onions were the traditional onion used in salads, but the Spanish red onion is now more commonly used. White onions have a stronger taste, great on top of pizza's. White onion are a cultivar of dry onion which have a distinct light and mild flavour profile.
